Sometimes the old recipes are the best. Our flour covered Be-Ro book has been sitting in the kitchen for as long as I can remember, but some of the recipes in there are still golden.
Mum always uses the book for cinnamon rock buns and scones, but my go-to has always been these delicious chocolate chip cookies that can be ready in as little as 10 mins! The recipe states it makes 18 cookies but I have never been that lucky with a rough 12 cookies usually coming out of the mixture.

Ingredients:
100g of butter
75g soft brown sugar
2 tbsp of golden syrup (add another squeeze or 2 of syrup if you prefer your cookies extra gooey in the middle)
175g self raising flour
2 tbsp of milk
100g of chocolate chips (or any choc really!)
Step 1:
After preheating the oven to 180°, whisk the butter and light brown sugar together.
Step 2:
Add the syrup, milk and flour and whisk again.
Step 3:
Stir in the chocolate chips with a spoon of choice.
Step 4:
The mixture won’t be like cookie dough it’ll be soft, so spoon onto baking trays leaving enough room in-between as they spread a lil when cooking for 8-10 minutes.
And that’s it, it really is that simple! Once cooked the cookies should look golden but still soft on top, which is key as they continue cooking slightly once out the oven.
Serve warm or cold with a cuppa and enjoy! A quick and easy recipe that’s sure to go down a treat.
