Galaxy cupcakes of dreams

Soft and fluffy cupcakes with a creamy Galaxy chocolate buttercream? Don’t mind if I do...


I’ve combined 2 recipes to make these dreamy treats so I thought it would be perfect to share with any fellow chocoholics or star baker fanatics out there.


Now, this cupcake recipe is something I’ve used for donkeys years and came from my first ever kids cooking book, so if you’re going to try them, just know you’re in for a treat.


For the cupcakes:

(Makes 12)

This recipe could work with both vanilla or chocolate cupcakes but let’s be honest chocolate is always the better option.


Preheat the oven to 180°c and line a cupcake tin with cases

125g softened butter

125g caster sugar

2 eggs

125g self raising flour (or if you’re making chocolate ones, 100g of self raising flour and 25g of cocoa powder)

2 tbsp milk

Secret ingredient: a splash of vanilla extract


I just chuck it all in a bowl as an all in one method, but feel free to do the classic butter then sugar then eggs then flour etc


Top tip! Use an ice cream scoop to transfer the mixture to the cases for even sized cupcakes.


Bake for 15-20 minutes and leave to cool fully before adding any icing.



For the buttercream:

I’m using Galaxy as I’ve tried the icing for a birthday cake recently and it worked so well, however I’m thinking any chocolate would work so give it a go! I’m planning a possible chocolate orange twist on this recipe to try before Christmas.


100g soft butter

150g icing sugar

1/2 tbsp cocoa powder

100g Galaxy milk chocolate (plus extra for decoration and to eat whilst you’re baking)


Step 1: Mix the butter until soft and slowly add the icing sugar until all combined.


Step 2: Mix in the cocoa powder

Step 3: Melt the 100g of Galaxy either in the microwave or on the hob on top of a bowl of hot water and leave to cool slightly before pouring into the mix and stirring until combined.


Step 4: decorate your cooled cupcakes with icing and a chunk of extra Galaxy for decoration (if you haven’t eaten all the extra whilst cooking…)



If you are fancy and have all the bits and bobs to do piped buttercream then fill your boots - but I just blob it on and hope for the best.


Serve with a good cup of tea and enjoy!
